Roasted Root Vegetables with Herbs ‒ Yrttijuurekset



Root vegetables are perfect seasonal food. They're cheap, healthy, filling and easy to prepare. During the deepest winter I might've used chili and liquid smoke, but now that daytime is already as long as darkness I'm starting to prefer fresh tastes again and therefore spiced these up with dried herbs. The fresh ones are growing with speed too. Can't wait to be able to snip them while cooking.

- 500 g beetroot (I used a striped variety)
- 500 g rutabaga
- 500 g sunroot
- 1 parsnip
- 1 whole garlic (rest assured, the taste softens in the oven)
- 0.5 dl rape oil
- 1 tsp rosemary
- 1 tsp tarragon
- 1 tsp dill
- salt

Oil a casserole. Peel and cut the vegetables into mouth-size chunks. Free the garlic cloves from their skin. Mix the veggies, the herbs and rest of the oil in the casserole. Put in a 175°C oven. Remember to turn them around every now and then. They should be ready in about an hour.

Saturday Temptation ‒ Lauantaikiusaus

Kiusaus, meaning temptation, is a popular type of oven dish around Scandinavia. While I find it hard to explicitly tell how they differ from casseroles or gratins, at least in my mind there is a clear difference. Temptations tend to be care-free main courses, quick to prepare on any night of the week. You can just lay shred root vegetables in a casserole, adding spices and such between the layers.

This one is an ideal supper for a lazy Saturday. You can put it in the oven and go to have a sauna. It should be ready by the time you come back.

- 500 g sunroot
- 250 g tofu
- 1 red onion
- 1 sheet of nori
- 2 dl oat cream (or oat milk)
- 2 tablespoons margarine
- dill
- thyme
- coriander
- black pepper
- salt

Wash the sunroots and remove bad parts but don't bother to peel. Slice as thin as you can. Julienne the tofu. Mince and saute the onion.

Oil a casserole and arrange a thin layer of sunroots on the bottom. Sprinkle with spices, onion and nori pieces. Add a layer of tofu. Repeat layering as long as you have something left. Lastly, cover with a few sunroot slices, sprinkle with spices and pour the cream on the temptation evenly. Top with margarine pieces.

Stick into a 200°C oven for about 45 minutes. (One way to make it even juicier is to turn the oven into a low heat after the temptation has acquired some colour and let it simmer for one more hour. In this case you may need to add some stock in the middle to prevent it from drying up.)

Serve with pickles.

Sunroot Puré Soup ‒ Maa-artisokkasosekeitto

Purés and mashes are an easy form of enjoying the new root vegetable harvest. Carrots, beets or rutabagas are just cooked soft, mashed and spiced. For a change I used sunroots instead of potatoes for this lunch soup but don't think the difference between them is that huge.

The recipe is mostly from Kotimaiset kasvikset.

- 500 g sunroots
- 1 small parsnip
- half a leek (the white part)
- 7 dl water
- 1 dose of stock
- 1 dl oat cream / 100 g soft tofu
- 2 tablespoons rape oil
- nutmeg
- black pepper
- chervil
- 1 onion
- 3 dl soy flakes

Peel the sunroots and the parsnip. Chop them and the leek. Boil until soft. While waiting, fry the onion together with the soy flakes until crispy. Add the spices into the pot and puré the soup. Sprinkle the soy flake mixture on top of the soup after you've scooped it to your plate.
